    Abstract

    Longjing Shrimp (or Dragon-well Shrimp) is a famous dish in the areas south of the Yangtze River. It is said to have been fortuitously created by a chef when he served an emperor in plain clothes. “龙井虾仁”是一道杭州名菜。传说它是一位厨师接待微服到访的皇帝的一次“意外”之作。
